Easy, Breezy, Guacamoly…

Oh sun where are you??  You dont dare to show you face often enough in Montreal these days and how am I suppose to enjoy this delicious Guacamole on my balcony with a good book if you’re never there!! 🙁 #SadFace

Ok seriously, the past few days and weeks have been quit rainy, gray and cold on my side of the planet.  I’m starting to think  that we are going to have a very rainy summer if we even have one.  At least my garden is not doing THAT bad and I’ll be tasting some of the juicy tomatoes growing in my plants soon but I feel like it could be stronger.  Mother nature doesn’t seem to like us that much and I’m hoping this post could be the beginning of an apology for what ever she feel like we did around here….  This year’s winter was harsh, then we barely had a spring and now it’s raining like crazy… ugh…

I hope the weather is a lot nicer on your part of the planet and you have all the sun you need to put yourself on your balcony (or in your backyard) with a beer, a good book and this flavorful guacamole that takes only a few minutes to make….

– INGREDIENTS –

1 Big Avocado

The Juice and the Zest of 1 lime

1 Jalapeno Pepper

2 tablespoons of freshly chopped coriander

pinch of salt to taste

1- In an electric blender add all the ingredients except the salt.  Puree the mixture till the desire consistency, then adjust the taste with the salt.

2- Serve with tortilla chips, crackers or on anything else you want!

    Looks delicious! On friday I’ll already finish my exams and have enough time to cook (meybe follow one of Your recipes ;)) and workout. Can’t wait for Your next recipe!
