Spinach & Tomato Galette with Hard Boiled Eggs

It was my first time making a galette of any kinds and like the girls from Food52 said in their video for the NY Times, making a galette is super easy and it’s one of those meal where you don’t really need a recipe and, once you understand the principles, and/or you already have your dough recipe ready, it’s only a question of filling.

A few days ago, without any recipe but with a head full of ideas, I gave it a shot.  The dough came out hard and cracky like I wanted and although it was a “win”, I promised myself to make a different crust for each future galettes because… well… they are worth it!

I sincerely hope you get around to try this one.  We ate it as a breakfast with a hard boiled egg but by all mean be creative and eat it for lunch and dinner as well.

Freezing Tomatoes

This year was my first time exploring my gardening skills.  I have a vague memories of my mom growing a few herbs when I was younger and memories my grand mother on her knees, every week ends and almost every day, but I never experienced the whole gardening deal myself.  For a long time I didn’t even bothered with it because I always thought that I sucked at it because I killed a cactus once. ..I know, it’s a retarded way to think.. you don’t need to tell me lol

I decided to give it another try when everything was going bad in my life.  I was on the edge of the panic attacks, my world was falling apart around me and I thought… I need to find something that relax me because I’m gonna go insane! 

Cooking was obviously always an option to help me relax but when my head goes too crazy, I find it hard to concentrate on making a recipe.  I needed something a little bit more brainless and as rewarding.  Thank you so much for the Jean-Talon Farmer’s Market because I was able to buy a few tomato plants, fresh herbs and 2 hot pepper plants that same week end and start my new adventure with urban gardening.  Obviously I loved my experience and discovered myself a new skill!  Just goes to show that it’s never too late to try again and get better!

Although the summer haven’t been the best, my tomato plants have been giving me so many tomatoes this year.  I haven’t purchased tomatoes all summer and I know I’ll have some for the next months to come!  Now the question was…  what to do with all those tomatoes?  What’s the best ways to preserve the freshness of the summer without too much hassle?

“Red Pesto” Roasted Chicken

For a long period of my life, the idea of roasting an entire chicken scared me.  I felt intimidated by the task and was worried that if I was to miss my recipe, I would feel twice as bad because I’ll be wasting an entire bird.  What I didn’t know, is that making a finger licking good roasted chicken is actually quit easy AND the possibilities are endless once you understand the basic rules.  Today I felt like using the new “pesto” powder I had made a few days before with the fresh basil leaves growing in my garden.  I’ve also been harvesting quit a lot of fresh tomatoes from my plants and this recipe was the perfect occasion to use them.

I called this recipe “red pesto” chicken because of the prominent taste of the pesto powder and the nice red color that comes from the juicy roasted tomatoes.  I hope you’ll enjoy this recipe, make sure to keep all the  juices and left over tomatoes from the pan because in my next post, I’ll be showing you how to make a delicious and filling soup with it.

Pulled BBQ chicken Taco

Pull-Apart, Pulled or Shredded BBQ Chicken can be eaten in so many ways… today I decided to make tacos with it but you should also try it out as a burger between a nice and fresh kaiser bun.  It’s easy, flavorful and I personally don’t know anybody who didn’t enjoy this recipe.  The sweet touch of maple syrup, fresh avocado slices and grilled bell peppers, it’s making it the best easy summer dinner or comforting winter meal.
