Grilled King oyster mushroom salad

Don’t get me wrong, I love making sweets.  There’s something really happy about making something full of sugar because you know most people will be happy to eat it and you’ll get the satisfaction of watching them stuffing their faces with something you made with love.  Now, thing is, we can’t really eat sweets all the time (that’s a tragedy if you ask me) so this recipe is coming just at the right time to balance all the sweetness I’ve published on the blog lately.

King oyster mushrooms are one of my favourites because they are super meaty and they look beautiful in a plate.  Paring them with roasted tomatoes (aka: umami bomb – thank you Ivan Ramen for coining the term) and miso, you’ll quickly understand why I decided to post this recipe on here.

Sooooooo…. this sentence is getting redundant but, I really hope you get too try this quick and easy grilled king oyster salad with miso dressing on days where it’s too hot to eat anything to complexed or when you’re just too lazy to break your head in the kitchen.

Did you know beetroots and green apples are a match made in heaven?!  Yes it is!

The tanginess of the Granny Smith’s apples with the sweetness of the beetroots blend PERFECTLY and should definitely be use together more often.   Right there, on the top of my head, I’m thinking of a puff pastry with thin sliced of apples, beetroots, green onions, goat cheese and maybe a bit of thyme and spicy oil to make some seriously delicious and gorgeous little tarts.   Who knows, this might become a future project…

The day of my trip to Budapest is coming soon.. At this same time next week, I’ll be on the other side of the world doing… well… a description of what I’ll be doing would inappropriate to for this blog so I wont finish my sentence LOL…  Witch means that I have to go over all the veggies and fruits left in my fridge and make sure I keep eating healthy and not too much to get to my weight goal for the trip.

I’ve been experimenting a lot with tofu in the past weeks and since it’s such a versatile ingredients, extremely healthy and low fat, I thought it would be important to create a new category for it since I’ll be sharing a lot more recipes featuring this amazing ingredient.  Today I’ve been teasing my facebook followers about a tofu spread recipe but I’m not 100% happy with everything I’ve made yet so here’s a fun little salad instead that could be serve as a fun appetizer….

The measurements for this recipe is for 2 persons so make sure you adapt the quantities if you’re serving more than 2.  Enjoy!

Strawberries, Kale & Feta Salad

I had such an AMAZING tapas night with my cousin yesterday.  Because of our night, I’m able to present you a much healthier recipe (compare to my last one) on this sunny Saturday that we invented after a day at the farmer’s market.  We walked around for hours looking at all the gorgeous flowers, organic fruit stands and biologic butcher shops at the Marché Jean-Talon that I even got a mini sunburn on my shoulders… ouch! ..but it was worth it.

After buying all the ingredients needed for the night, we went back to her place and had fun creating a few new recipes that I will be sharing in this blog in the upcoming weeks.  Stay tuned for all that deliciousness 😉 hehe

Since we are young, my cousin and I have always been cooking together.  I remember this one year, when my mom was still living in Paris and I lived one year at my grand parents house in the middle of the woods, she was often coming back home with me after school to cook and invent recipes.  I guess I can say that we have an incredible “kitchen chemistry” and we are both passionate with cooking because we always end up creating delicious meals and it’s definitely our way to socialize and have fun when we are together.

She’s been living in Montreal for a few years now but we are both extremely busy and I unfortunately don’t see her as often I would want to.  Before yesterday, our last “cook off” was a YEAR ago!!!  Pretty bad right?  I know we’re awful….

And it’s not even because we don’t like to spend time together (pretty much the opposite) but like I’ve said, I’m super busy with my business and she’s a full time student doing her master degree while working many hours a week.  I wish our schedule was more flexible so we could do this more often but at least the internet is there to keep in touch.  Last night we made the promise to see each other more often.. let’s hope we’re able to make it this time!  We always have so much fun and look at the delicious goodies we are preparing!!  Please keep your fingers crossed for me so we see each other more often. 😛

I’m planning a bunch of photo shoots in the upcoming months and I have to start watching what I eat…. Sound awful right? lol  No worries it’s not THAT bad because my head is full of delicious ideas to keep me happy even when I have to watch what I eat…

This is a fun and easy recipe, for example, that I like to prepare as a lunch during those “model bootcamp” time but you could easily serve it as a fun appetizer.  The total recipe will give you 4-5 maybe even more portions of polenta and salad dressing so it’s something you can keep in your fridge for about a week and grill your polenta at the last minute when you’re ready to eat it.  I hope you’ll like it as much as I do and let me know how it turned out!

Fun Spring Salad with Fennel, Carrots & Apples

Even tho it’s technically spring right now, I’m looking outside my window and I don’t see it.  Last week, for our first day of Spring, we had a big snowstorm in Montreal and since it looks like we are in the middle of January.  The worst thing is, 2 weeks ago there was no more snow outside, the weather was starting to be nice and uplifting and the birds were singing.  I’m wondering how surprised those pore little birdies were when they realized that only a few days after they either woke up or came back from the south, mother nature still had a ton of snow and cold weather for them.

One thing for sure, mother nature is getting more and more erratic with the years… and I cant believe some people are still so close minded that they don’t believe in global warming.  …Ugh, ignorance like this annoyed me till no end and I feel like slapping all those people in the back of the head for having such ignorance but again, it’s not my place to do so but since this is my blog, I’m venting away lol  …sorry about that that.

On a much funner and tastier note, I decided that even if it’s not as sunny as I would have expect it today, I’m not going to let this weather gets to me and I will be celebrating the arrival of Spring anyways with some fun light and flavorful salads like this one.  It’s also part of my few posts that I’m dedicating to my contracted models who are seeking for healthy and low calories recipes to prepare because they have to go on photo shoots very soon.  I hope you’ll enjoy this fennel, carrot and green apple salad as much as I did.  It’s super easy to do, barely take any ingredients and will keep you full for quit a while.  Enjoy!

Grilled Maple Salmon Salad

I was reading one of my contracted model’s blog the other day and she was asking for diet tricks and recipes.  I have to admit that the word “diet” scares me till no end and I much prefer to keep a healthy everyday lifestyle and work on my portion control then go on a diet because most of the time I don’t stick to it and I get either frustrated for not eating what I want or I loose too much energy by not eating enough or the right things.  Plus, most of the time when the diet is done and you’re back at your normal eating habits, you gain everything you had lost and sometime a bit more.

As a model, worrying about my waist line is part of my everyday job you’ll say and that’s kind of true.  But I don’t believe in dieting and I don’t believe in starving myself.  Yes, I’m a model and what I look like is important but I will never starve myself because I simply love food way too much.  Over the years I had to adjust my eating habits, learn to work out the right way everyday and stop myself from buying easy and fast processed food.  I learned to make everything myself from scratch and to be honest, I’m glad I did!  These days I much prefer to never eat pizza again because I’m too lazy to make my own dough, sauce and everything than buying one of those pre-made versions.  If I haven’t made it from scratch, I simply don’t eat it.  It’s that simple.

Agreed, it’s annoying at time because you’re really craving for something specific that you just don’t have on hand but it’s a great way to learn self control.  If you really want to eat that specific thing, you just have to make it from scratch and try to make it healthier than the store bought version.  Everything is possible and as long as you keep to this rule and work out everyday, you’ll be fine in my book.  It has been working for me for the past 5 years now and I’ll never go back to my old eating habits.

Now to talk about about this salmon recipe…  It’s easy, fast and very good for you.  I don’t think I need to convinced anyone about the greatness of omega 3 and fatty acids.  It’s good for you, good for your brain and so dam delicious.  Like any other “fatty” fish like the salmon, we have to eat it in moderation but I think once a week is ok if you’re really a salmon addict or at least once every 2 weeks.

The contrast of the salty fish with the maple syrup (my obsession) and the sourness of the green apples drench in lime juice is amazing!  This amazing salad will keep you feeling full for the rest of the night or pump you up full of energy to go do over 1 hour of cardio.  Hope you’ll enjoy this recipe as much as I do 🙂
