“Red Pesto” Roasted Chicken

For a long period of my life, the idea of roasting an entire chicken scared me.  I felt intimidated by the task and was worried that if I was to miss my recipe, I would feel twice as bad because I’ll be wasting an entire bird.  What I didn’t know, is that making a finger licking good roasted chicken is actually quit easy AND the possibilities are endless once you understand the basic rules.  Today I felt like using the new “pesto” powder I had made a few days before with the fresh basil leaves growing in my garden.  I’ve also been harvesting quit a lot of fresh tomatoes from my plants and this recipe was the perfect occasion to use them.

I called this recipe “red pesto” chicken because of the prominent taste of the pesto powder and the nice red color that comes from the juicy roasted tomatoes.  I hope you’ll enjoy this recipe, make sure to keep all the  juices and left over tomatoes from the pan because in my next post, I’ll be showing you how to make a delicious and filling soup with it.

My first post on HonestCooking.com!

I’ve been approved to be a regular poster on the famous website HonestCooking.com, a few months ago, but never got around to post anything because of my busy schedule.  Recently they created a bot that goes in each of their columnist’s blog to grab some posts for their site and I’m glad my Cajun Roasted Almonds were the first recipe they grabbed.  I’m super proud to be able to contribute to such famous site as honest cooking and I’m looking forward to add more post and hopefully one day maybe do an interview for them? 😛  Ok maybe I think too far already but everybody can dream right? 🙂

Sweet & Salty Cajun Roasted Almonds

I always have nuts laying around in my house.  Either roasted with spices or just raw, I love them all.  It’s a great and healthy way for me to get a boost of energy and make sure I eat all your good fat and control my blood sugar to get me through the day at the computer or on the go at a photo shoot.  I’ve been wanting to show you all the great recipes you can do with my homemade cajun spice blend but didn’t had much time as you can probably see by the number of updates on the site.  So this morning I decided that enough was enough and I had to shoot at least one recipe!  Good news, I ended shooting 3 new recipes including this one so make sure you don’t miss the next updates because they are going to be delicious 😛

Roasted Fennel with Grains of Paradise, Honey and Thyme

I meant to post this yesterday but life had decided otherwise…

 Here’s the first recipe of many others where I’m using the amazing grains of paradise that we learned about in my previous post.  Like I told you in that post, one of my favorite uses for these amazing peppery seeds is on roasted veggies and what’s better than roast fennel bulbs seriously.  This recipe is simple and delicious plus you can serve this side dish with pretty much anything.  I personally love it on the side of  a big juicy steak 😉

Make you own Butternut Squash / Pumpkin Puree

I realized that earlier this autumn I said that I had made my own pumpkin puree for my recipes but never thought about showing you how to create your own.  It’s super easy and once you try it will be really hard for you to go buy the canned version again.  Today I’ll be making butternut squash puree but you can use this same technique for making pumpkin puree, other squash and even potatoes.

The secret is all in the roasting…  Hope you find this post informative 🙂

Pulled BBQ chicken Taco

Pull-Apart, Pulled or Shredded BBQ Chicken can be eaten in so many ways… today I decided to make tacos with it but you should also try it out as a burger between a nice and fresh kaiser bun.  It’s easy, flavorful and I personally don’t know anybody who didn’t enjoy this recipe.  The sweet touch of maple syrup, fresh avocado slices and grilled bell peppers, it’s making it the best easy summer dinner or comforting winter meal.
