Marinated Cauliflower with Graines a Roussir & Preserved Lemon

Recipe type: Appetizer
Ingredients
  • 3 cups of small cauliflower florets
  • ¼ cup of green olives (about 10), finely chopped
  • 3 garlic cloves, minced
  • 3 tablespoon of olive oil
  • 1 tablespoon of lemon juice
  • 1 tablespoon of apple cider vinegar
  • 1 preserved lemon, chopped
  • 1 tablespoon of chopped fresh coriander leaves
  • ½ teaspoon of powdered graines a roussir
  • Salt & pepper to taste
Instructions
  1. - Prep the cauliflower and keep only the florets. Measure about 3 cups of florets, steam them for 10 minutes.
  2. - Mix all the other ingredients in a big salad bowl and then mix in your steamed cauliflower.
  3. - Leave in the fridge to marinate for at least 1 hour before serving.

Green Spinach Pesto

Here’s a fun and “jazzed up” pesto recipe made with fresh baby spinach, hemp seeds, arugula, coriander, Parmesan and more!    The first time I made this, it was to go with some homemade raviolis stuffed with light ricotta and feta cheese and ohhhhhh!  …I made a lot of happy tummy that night.

To make the pasta sauce, I stretched a few tablespoons of this pesto with coconut milk and a tab more garlic (I’m obsessed with garlic so taste before adding more) and just like that, I had made an flavorful and creamy sauce.  Later that week, I used it for grilling some juicy steaks and even made a dip for the meat!  Both experiences were very welcomed by everybody who had the chance to taste it and now it’s your turn to try 🙂

Homemade Apple Sauce

When I first moved in to my own place, one of the activities I liked the most was to create recipes to fill up an adorable blank recipe book my mom offered me to celebrate the beginning of my independence If I remember right, apple sauce is the first thing I tried to make because even if I don’t dislike the store bought version, everything is always so much better when it’s homemade right? Too bad my family never shared with me any recipe for apple sauce but like you will see, it’s so easy that it almost doesn’t deserve to have a recipe. Everybody is adds their own touch in the end but the basic of the process is universal.

What’s fun about this apple sauce is that it can be use on pretty much everything! From meat to baked goods, the tangy taste of the apple and the spicy and delicate aroma of the cardamom are a great addition to main dishes and deserts. I have a few recipes up my sleeves where I am using this versatile apple sauce that I will be sharing them with you but till then, hope you enjoy this post that bring me back in my first closet size kitchen. 🙂 Ahhhh memories 🙂

The Perfect Lemon Squares

We had some really good weather in Montreal a couple of weeks ago…  The sun was out, the birds too and it really felt like a hot summer day.  I decided to make some lemon squares that week end because there is something with lemon and the bright light of the sun that I find match perfectly.  I always make sure not to add too much sugar in my preparation because I find it’s an mistake that some people do often.  I understand that some might want to over power the zesty taste of the lemons with sugar and vanilla but it’s really not my case…  I remember eating the lemon straight up like that when I was a kid and loving the tangy/zesty aroma of this fruit.  I hope you will enjoy this recipe, I wish I had better photos because those were taken a little while ago but those were the only one I had on my computer…
