Chicken thighs with zucchini & delicata squash chutney

This is a recipe that was featured on Twitch and you can rewatch the episode in replay if you missed it.

If you’re searching for a quick and easy dish that will for sure please most palates, this is it.  Not only that it’s close to impossible to miss the cooking on chicken thighs, your don’t even need to peel the skin of the squash which will save you loads of time.  Delicata squashes are part of the summer squashes family, pretty much like zucchinis, and they are often available at the grocery all year long depending on where you live.

You will find a great balance between the spices on the chicken and the sweetness of the chutney.  The lemon zest and the fresh mint leaves playing the role of adding extra layers of flavours to bring everything together.  It truly is an amazing dish and I sincerely hope you get to try this recipe.

Cant find a delicata squash at the grocery?  No problem.

Fresh cubes of butternut or acorn squash will be perfect as a replacement.  Just don’t forget to remove the skin and use about a quarter of the squash (because delicata are much smaller in size), prior to grill them.

Brown rice salad with whey dressing

A fun salad that you can eat warmed up or cold with a nice crunch and a sweet whey dressing.

Top it with a poached egg and make it a meal or enjoy it on it’s own or as a side.  Personally, the version with the poached egg is my favorite and with a few droplet of hot sauce it’s even better!

Cant find cream cheese or simply fresh cheese at the grocery?

No problem!  You’ll just make your own and feel how rewarding it feels to create from scratch such humble product.  Personally, cheese making has always been something that excited me but I sadly havent dabbled in the process that much.  This simple fresh, spreadable cheese is my second attempt at the process after making Lebneh which is also something you will want to try.  Hope you enjoy this.

Basic Mayonnaise

When I became nomad, almost a year ago, I knew my kitchen habits had to chance.  Done with the luxury of being able to buy a big pot of mayonnaise without worrying if it would be done in time.  Since we have been renting fully furnished apartments and we’ve been living in our suitcases, being able to store items in the fridge for weeks/months on end isn’t an option anymore.

You obviously don’t need to be nomad to make your own mayo.  You should have the desire to do so already because of the simple fact that you’ll feel extremely accomplished making this basic commodity that we’re so used to buy and you’ll be able to customize it exactly the way you want.  What I’m giving you today is a base, feel free to jazz it up by adding your favourite spices to make it your own.

Fun Spring Salad with Fennel, Carrots & Apples

Even tho it’s technically spring right now, I’m looking outside my window and I don’t see it.  Last week, for our first day of Spring, we had a big snowstorm in Montreal and since it looks like we are in the middle of January.  The worst thing is, 2 weeks ago there was no more snow outside, the weather was starting to be nice and uplifting and the birds were singing.  I’m wondering how surprised those pore little birdies were when they realized that only a few days after they either woke up or came back from the south, mother nature still had a ton of snow and cold weather for them.

One thing for sure, mother nature is getting more and more erratic with the years… and I cant believe some people are still so close minded that they don’t believe in global warming.  …Ugh, ignorance like this annoyed me till no end and I feel like slapping all those people in the back of the head for having such ignorance but again, it’s not my place to do so but since this is my blog, I’m venting away lol  …sorry about that that.

On a much funner and tastier note, I decided that even if it’s not as sunny as I would have expect it today, I’m not going to let this weather gets to me and I will be celebrating the arrival of Spring anyways with some fun light and flavorful salads like this one.  It’s also part of my few posts that I’m dedicating to my contracted models who are seeking for healthy and low calories recipes to prepare because they have to go on photo shoots very soon.  I hope you’ll enjoy this fennel, carrot and green apple salad as much as I did.  It’s super easy to do, barely take any ingredients and will keep you full for quit a while.  Enjoy!
