Green Spinach Pesto

Here’s a fun and “jazzed up” pesto recipe made with fresh baby spinach, hemp seeds, arugula, coriander, Parmesan and more!    The first time I made this, it was to go with some homemade raviolis stuffed with light ricotta and feta cheese and ohhhhhh!  …I made a lot of happy tummy that night.

To make the pasta sauce, I stretched a few tablespoons of this pesto with coconut milk and a tab more garlic (I’m obsessed with garlic so taste before adding more) and just like that, I had made an flavorful and creamy sauce.  Later that week, I used it for grilling some juicy steaks and even made a dip for the meat!  Both experiences were very welcomed by everybody who had the chance to taste it and now it’s your turn to try 🙂

“Red Pesto” Chicken & Quinoa Soup!

Ok so on Monday we made “red pesto” chicken and we were left with a decent amount of delicious chicken and left over juices with tomatoes from the pan.  For everybody who have kept all the juices and tomatoes, like I advised on Monday, here’s what we are going to do with them.  Now the juices have been in the fridge for a day or two, time to get it out and use it to make a delicious and filling soup that will for sure please everybody and save you some precious time in the kitchen.

My first post on HonestCooking.com!

I’ve been approved to be a regular poster on the famous website HonestCooking.com, a few months ago, but never got around to post anything because of my busy schedule.  Recently they created a bot that goes in each of their columnist’s blog to grab some posts for their site and I’m glad my Cajun Roasted Almonds were the first recipe they grabbed.  I’m super proud to be able to contribute to such famous site as honest cooking and I’m looking forward to add more post and hopefully one day maybe do an interview for them? 😛  Ok maybe I think too far already but everybody can dream right? 🙂

Roasted Fennel with Grains of Paradise, Honey and Thyme

I meant to post this yesterday but life had decided otherwise…

 Here’s the first recipe of many others where I’m using the amazing grains of paradise that we learned about in my previous post.  Like I told you in that post, one of my favorite uses for these amazing peppery seeds is on roasted veggies and what’s better than roast fennel bulbs seriously.  This recipe is simple and delicious plus you can serve this side dish with pretty much anything.  I personally love it on the side of  a big juicy steak 😉

Yes it is possible!  There is an actual science on how to make the perfect bacon strips every time with no fuss what’s so ever.  You can even use this technique to make the whole package of bacon in advance and keep it in an air tight container, in the fridge, for sometime more than a week!  It’s a life saver seriously and thank you so much to my love Max for showing me this trick when we first started going out together.  I used to make the bacon on the stove top like most people and I used to hate every second of it because it’s super messy and most of the time I end up burning myself because I’m too clumsy.
