Goat Milk Crèmes Brûlées

That is one “kick booty” recipe for crèmes brûlées and the 2% goat milk not only make it healthier than the version made with full fat cream, it enhance the tasting experience because goat milk and sugar is just an incredible combination.  I really hope you get to try it for Valentine day as it’s super easy to do and look super fancy.

Ingredients
  • 2 cups of 2% goat milk
  • 1 egg at room temperature
  • 3 egg yolks at room temperature
  • ⅓ cup of cane sugar
  • ⅛ teaspoon of vanilla extract

  • Equipment:
  • 4 ramekins
  • torch
Instructions
  1. - Pre-heat oven at 300F. Start boiling some water.
  2. - Prepare four oven safe ramekins in another pan which we'll add our boiling water in to create a water bath. This will make sure your crèmes brulées stay moist while cooking in the oven.
  3. - In a sauce pan, on the stove top, on medium/high heat... mix in the goat milk, cane sugar and vanilla extract.
  4. - In a mixing bowl, whisk the egg yolks and full egg. Reserve
  5. - Bring the milk to a boil, remove from heat.
  6. - Temper the eggs: while constantly whisking the egg mixture, add a small amount of warm milk till the entire milk and sugar mix is added. The goal is to make sure the eggs wont coagulate with the introduction of heat, hence why we do this process slowly.
  7. - Pour the liquid inside each ramekins and put in the oven for 1hour
  8. - Take out of the oven and let cool down a bit. Once cooled down, put the ramekins in the fridge till you're ready to serve, at least one hour.
  9. - When ready to serve: Add 2-3 teaspoons of cane sugar on top of each crèmes and swirl it around to push the sugar, equally, everywhere. Burn with the torch and let cool down for 2-3 minutes before digging in!
