Apple & ginger crumble

This is actually a pretty easy recipe.  Although, when I first made it on Twitch, it wasn’t optimal.  There was not enough fruit to crumble ratio but the result became some delicious “cereal” that kept me well fed and happy for the few days after the stream.  Yesterday, I made it again to tweak the recipe and take photos. The result is a wonderful dessert that I’m eating with a spoon as we speak!

Hope you get to try it and if even if you’re not a fan of apples or ginger, you can make it with pretty much any fruits you like.  This is the kind of easy going recipe that you’ll learn to love because the possibilities are endless.

When making a crumble, the possibilities are endless! Replace the fruits with what ever other fruits you like and make this recipe your own.

Serves: 9 portions
Ingredients
  • For the crumble:
  • 1½ cup of quick oats
  • 1 cup of all purpose flour
  • ¾ cup of butter
  • ⅓ cup of cane sugar
  • ½ teaspoon of saigon cinnamon (optional)
  • For the fruit layer:
  • 8 apples (I used Cortland apples because they keep their shape during cooking and have a nice tartness to them)
  • 2 tablespoons of grated ginger
  • 2 tablespoons of tapioca starch (or corn starch)
  • 2 tablespoons of brown sugar
  • 1 teaspoon of saigon cinnamon
  • ¼ teaspoon of green cardamom powder
  • pinch of ground cloves
Instructions
  1. - Start by making your crumble. Mix all the ingredients in a bowl and, with your hands, break down the soft but still cold(wish) butter in the mixture. A few clumps of butters are absolutely acceptable and the end texture should be resembling to wet sand. Reserve in the fridge.
  2. - Pre-heat your oven at 350 and get yourself a 9x9 brownie pan.
  3. - Remove skin and cores of the apples and cut them in to cubes. In a mixing bowl, mix everything together.
  4. - Transfer the fruit layer in your pan and add your crumble on top.
  5. - Bake for 45 minutes.
