Fennel & Honey Soup

Delicate, simple and flavorful…. I really think this soup is going to rock your world on a cold and rainy day or simply when you feel sick and uninspired to make food.  Pretty much like me today… the cold weather is really putting a down on my mood but at least I get to do what I like and it’s to come here to post new recipes.

I’m hoping you will enjoy this soup, the mix between the sweetness of the honey and the very distinct aroma of the fresh fennel and fennel seeds really give it something original and comforting.  Let me know how it turned out!

– INGREDIENTS –

1 fresh fennel cut in small cubes (about 3 cups)

1 cup of coconut water

2 cups of water

2 cup of low sodium chicken broth

4 teaspoons of honey

1/2 teaspoon of majoram

1/2 teaspoon of fennel seed, crushed

1/2 teaspoon of coriander seeds, crushed

Salt and Pepper to taste

1 teaspoon of olive oil

1- In a medium sauce pan, on the stove top at MEDIUM/HIGH, add the olive oil and fresh fennel cubes.  Let the fennel cook for 5-6 minutes, this will help to bring out all the sweet aroma we love.

2- Add the rest of the ingredients and let simmer at LOW temperature for a minimum of 2 hours.

Pretty easy right?
