Dijon & Gochujang Chicken sandwich

This deserves to be in the #NoRecipe section even if there’s still a minor mix of flavours that needed to be written.  Too often I skip breakfast and end up making a fully loaded brunch sandwich so this was today’s.

Dijon & Gochujang Chicken sandwich

Serves: 1 sandwich
Ingredients
  • For the sandwich:
  • 1 croissant
  • baby spinach
  • 1 king oyster mushroom, sliced
  • old cheddar
  • 40g of cold shredded chicken breast
  • 1 large egg

  • For the chicken salad sauce:
  • 6g of chopped green onions
  • 10g of Dijon mustard
  • 4g of Gochujang
  • 4g of olive oil
Instructions
  1. - On the stove top, grill the king oyster mushrooms. Then grill the egg, pop the yellow, make a flat omelette.
  2. - In a mixing bowl, mix all the ingredients for the chicken salad sauce together and then mix the shredded chicken in there. Reserve.
  3. - Assemble from the bottom layer to the top layer: baby spinach, chicken salad, thin slices of old cheddar cheese, grilled mushrooms, baby spinach and a bit of extra dijon on the top bun of the croissant.
