Sweet potato & red lentil soup

Instant pots are awesome.  I havent been talking a lot about them just yet but let’s say that mine is being use quite often and helps me eat food that would only be possible with many hours of prep and cooking.  In about one hour, instead of six, I get a perfect meal.  This soup is like the soup you’ll throw in at the last minute but will make you look like you’ve actually done something amazing.

To add the swag to your simple soup, it’s all about the toppings.  I kept it simple, for this one, and topped the soup with the thinly sliced dried peppers that you often find on a juicy bowl of ramens and a few drops of sesame oil and sea salt flakes (Maldon) – to add a fun twist.

Sweet Sesame, Potato & Chickpea Curry on Black Japanese Rice

This is clearly not a traditional curry but it is inspired from what I know about the culture.

 The idea started from the seasoning attached to this recipe.  Pre-made spice blends save my life when I’m uninspired after a long day working and, this seasoning was inspired from the episode of Chef’s Table (…on netflix, you HAVE to watch it) where they featured the progressive restaurant Gaggan in Bankok.  The way Gaggan Anand described the perfect flavour balance of his dish made my head spin and this is what I was able to come up with.  Some red chili powder would be interesting  to give it a spicier twist but, I sadly didn’t have any on hands.  Instead, I choose to top the curry with a little bit of Kochukaru (Korean red pepper flakes, used in kimchi) and it gave it the little spiciness I didn’t add in the seasoning.

I hope you’ll enjoy this potato & chickpea curry recipe and new spice blend attached to it.  Make sure to have a small container for the remaining seasoning because you’ll have extra to be creative with.

Healthy Chicken & Carrot Bowl

I wasn’t sure how to call this one.  Is it a soup? Is it a bowl?

Since I didn’t make a “bowl” category, this went in the soup section.  Searching for something easy to make, filling, healthy and super delicious?  …Or, like me, you just came across a BIG bag of carrot at the grocery and you need to use it asap?

The recipe calls for carrot “noodles”… to make them, use your hand grater and like if you were to remove the first layer of skin, continue grating more and more of your carrot till you arrive at the core.  Personally, I don’t use the core for “noodles” because the taste is a little too strong in my opinion but by all mean, save the planet, don’t be picky like me and use the whole thing.  *^_^*

Stove top, Maple & Guinness Baked Beans…

Happy St-Patrick’s day!!  … a bit late 😛 ahah

I had some left over Guinness beers in my fridge from my mini celebration and I thought… why not creating something delicious with them!  After all, I had been craving baked beans for some time after hearing some of my friend rambling about the beans they ate at the sugar shack they went to last week end.  Since the end of the winter is near (hopefully), all the sugar shacks are starting to open.  But I haven’t made any reservations anywhere this year and I’m not sure if I’ll even be able to because of the world schedule I gave myself so instead, I’m gonna bring the sugar shack to me and indulge in these sweet, filling and delicious Guinness, Maple & Rosemary baked beans.

There is obviously a ton of different ways to make baked beans.  I like to do mine on the stove top because my sauce pans don’t go well in the oven.  Feel free to try this recipe and let me know what you think!   I sometime like to eat a full bowl of those in front of the tv (I know it’s really bad but I cant help myself) but it’s mostly served as a side for a classic egg/bacon/potatoes breakfast.  Either way it’s delicious and you just have to try them 😛

If you like Guinness beer, maple syrup and bakes beans… this is a MUST!
