Apples & sweet clover extract scones

Yesterday was my first day back on Twitch and may I dare to say that it was a blast.

Talking to everyone again and meeting new awesome peeps really made my Wednesday afternoon magical.  It had been over a year since my last Twitch stream and I was a little nervous to get back on the horse, manage the chat and make sure the recipe I’m making isn’t a total disaster.

Luckily, everything went great and I’m already looking forward to the next stream.  Here’s the recipe that was created yesterday which turned out incredible!  Not that I expected it to be bad but, it was created on the spot and it took two hours to make it because of all the talking and probably a bit of the nervousness of being live.

In normal time, this is a recipe that will take you a maximum of 20 minutes (beside the rest needed for the apples) to make and I really hope you get to try it because it’s a strong 8-9/10 in my book.  A nice mix between a flaky savoury biscuit and sweet scone with the tartness of the apples (Cortland & Lobo) and the delicate aroma of my new favorite extract: sweet clover flowers.  If you ever come across this product, buy it right away.  If you don’t have any, don’t worry.  You can use vanilla extract instead but try to seek that sweet clover extract because it will be making a world of difference in these delicious scones.

Oranges & tahini breakfast bowl

My new obsession is those fancy breakfast bowls we can all admire on instagram.  It’s not something new, I’m just late to the party.

Hours and hours “wasted” or “invested” looking at those edible art pieces until finally finding the motivation to make one.  This is a savoury version with a creamy and garlic infused polenta dressed with green onions, Italian parsley, a sunny side up egg, grilled shiitake mushrooms & plantains.  To complete the look, you top it with an oranges & tahini dressing that has a hint of harissa, soy sauce and honey.

The black sesame seeds are optional but they look pretty sooo… the choice is yours.  Enjoy!

Sweet Potato & Nut Mix Toast

Fancy toasts are becoming a daily appearance in my kitchen, these past few days, and I’ve been wanting to share this one for a while.  After being a huge fan of the avocado toasts, I figure why not try the new internet sensation (in the foodie world at least): the sweet potato toast.

The taste didn’t disappoint as the sweet aroma of the potatoes and the spicy, smokey and aromatic topping come to add an interesting extra dimension.

Because even on your busy week mornings you deserve something fun and different for breakfast….  Enjoy!

Such an easy and interesting recipe the Cloud 9 eggs.  A leaky yellow ready for you to dip your toast in and a fluffy, almost like a perfect cloud textured egg white is my second favourite way to eat eggs after being poached.

Spinach & Tomato Galette with Hard Boiled Eggs

It was my first time making a galette of any kinds and like the girls from Food52 said in their video for the NY Times, making a galette is super easy and it’s one of those meal where you don’t really need a recipe and, once you understand the principles, and/or you already have your dough recipe ready, it’s only a question of filling.

A few days ago, without any recipe but with a head full of ideas, I gave it a shot.  The dough came out hard and cracky like I wanted and although it was a “win”, I promised myself to make a different crust for each future galettes because… well… they are worth it!

I sincerely hope you get around to try this one.  We ate it as a breakfast with a hard boiled egg but by all mean be creative and eat it for lunch and dinner as well.

Dino Kale & Blueberries Smoothie

I only tasted Dino kale for the first time this year, in California, although I had kind of a “crush” on this adorable plant the second I saw a photo of it in one of the many seed nursery magazines coming to my old place.

From my past experience with the regular curled leaves version, growing kale is a lot of fun because it is easy to take care of and it will grow back years after years!   Living in colder climate? that’s all right, Kale love chilly nights and some of them will even be fully happy with a little bit of snow.  If you give it a big enough pot, you can easily grow it on your balcony, in the middle of the city.  It will add joy to your landscape and feed you deliciousness for a really big part of the year.

Dino kale, when cooked, will remain sort of crunchy and can be easily replace any other types of kale/lettuce/spinach in your favourite dishes.  Today, we’re featuring this incredible green in a morning smoothie to start your day the right way!
