I’m always exploring new ways to eat beets as they are super healthy and have such an interesting taste palette. This simple, multi dimensional toast is putting those beets in display with the added touch of blueberries that comes to tie all the taste together. The mint and the pollen adds that extra freshness, in mouth, and equalize the strong tasting goat cheese. Lastly, the roasted garlic, previously rubbed on the toast, balance the cheese as well and reminds you that you’re eating a savoury toast.
